Marble Cake sweetened with dates

Servings: 15 PC

Prepping Time: 15 min

Baking Time: 40-50 min

Ingredients:

  • 250g Spelt flour
  • 30g Oat flour
  • 20g Lupine flour
  • 100g ground almond
  • 2 TL Baking powder
  • 200g Dates puree
  • 100 ml Rapeseed oil
  • 400 ml Almond Milk
  • 1 TL Baking soda
  • a squeez of lemon juice
  • Pinch of Salt
  • Pinch of ground Vanilla
  • pinch of ground cinnamon
  • +
  • 4 TBL Baking Cocoa
  • 10 TBL Almond milk
  • 70g Dates puree
  • Optional:
  • VfS-Couverture (half Portion)

Preparing:

  1. If you don't have a date paste, but use whole dates, soak them in the almond milk for 30 minutes and then puree the whole thing until you have no more pieces - for finished date paste, you can omit the soaking time, but again, puree the date paste with the almond milk so that you don't have any pieces
  2. Then mix the pureed date mixture with all the other ingredients (without the ingredients under the + sign) together to form a homogeneous mass
  3. Spread a little oil on an elongated cake pan Die Hälfte der Kuchen-Masse in die Kuchenform füllen.
  4. Pour half of the cake mixture into the cake pan.
  5. Preheat the oven to 180°C convection
  6. Meanwhile, mix the other half of the cake mixture with the ingredients under the + sign until homogeneous (puree the dates with the almond milk as described above)
  7. Now fill this mixture into the cake pan - briefly "swirl" with a fork in four places
  8. Bake the cake in the preheated oven for 40-50 minutes - after 40 minutes prick it with a wooden stick in two/three places - if there is no more cake sticking, you can take it out - if not, repeat the process every few minutes - until it fits - let it cool down for at least 30 minutes
  9. If you like, you can then coat the cake with VfS couverture
